Tuna Veggies Pasta Salad
Here is a great healthy salad recipe that I love. It is easy to make and absolutely delicious. You will more than likely have all of the required ingredients on hand.
-1 can water packed Tuna, flaked (120g)
-1 can Corn Niblets (Rinsed in cold water, 341ml) *Use half the can
-1 can Mixed Legumes (Beans, rinsed in cold water 540ml) *Use half the can
-Assorted mixed fresh veggies: I used half a small red pepper diced, half a smallgreen pepper diced, 2 celery stalks chopped, 2 carrots shredded, about 1/4 cup chopped red onion. You can really use whatever you like.
METHOD: In a large bowl, add the Tuna and break it up. Add the 1/2 can rinsed corn niblets and the rinsed mixed legumes (beans). You can rinse up the rest of the corn and legumes, add them to a container and refrigerate for another time, just use them within 3 days of time. Add all your veggies to the bowl and toss and mix well. I added about 2 TBLSP of Kraft Zesty Italian dressing when I was serving the salad. I do not add it to the bowl, only the servings. Refrigerate up until 3 days. Fast, easy and healthy. Hope you enjoy it! 😀
