BBQ Chicken with Sweet Potato Mash

Felt like a little bbq’d chicken with sauce that is not crazy on the calorioes, added a side of Mixed Potato Mash and broccoli with a twist.  Really quick to prepare and some things can even be done in advance.    I am including the bq sauce recipe and my potato mash…


–   1/4 Cup Extra Virgin Olive Oil

–   1/2 Cup Diana’s Gourmet Rib and Chicken Sauce

–   About 10 shakes of Frank’s Red Hot Sauce  (more if you like it hotter)

–   2 Tblsp. Dijon Mustard

–   1 Large Clove Garlic, minced

–   2 Shallots (green onion) chopped

–   Bunch of Fresh Basil, chopped

–   2 sprigs Fresh Rosemary

–   Pepper

–   Chicken pieces (bones removed, I used chicken thighs 10 pieces)

Method:  In a casserole dish add all the ingredients, except the chicken.  Whisk together well.  Rinse your chicken pieces and remove any fat.  Add to the casserole dish and coat well.  Marinate for at least 4 hours.  I actually prepare this the night before, marinating it longer really keeps the chicken tender and tastier.  Heat up your BBQ.  I microwave my chicken for 2 minutes, I really know that is a grill master NO NO…  but I find the chicken is soooooo tender cooking it in the microwave first, but only for a few minutes, then you do not have to grill the bageebees out of it (don’t you hate charred chicken and dry chicken!!).  When you are ready…grill away!

Recipe Red Potato & Sweet Potato Mash

–   About 3 Medium Red Potatoes

–   1 Large Sweet Potato

–   2 Tblsp. Butter

–   1 Small Clove Garlic, Minced  (you can use half to, it’s just to give a hint of flavor)

–   1/2 Cup Vegetable Stock (or veggie broth)

–   1/4 Cup Evaporated Milk  (I used Carnation)

Method:  Peel red and sweet potato and cook until tender.  Drain the water  (you can save the water from the potatoes, makes an excellent stock for futur soups, gravies etc…).  Mash the potatoes and add the butter, remash and add the garlic, vegetable stock and evaporated milk.  Mash, mash and mash again.  Sprinkle with pepper or chives, absolutely delicious and not bad on the calories too!

For my broccoli all I did was steam it, and squeeze 1/2 a lemon over it, and I topped it off with some freshly grated parmesan cheese, ummmm  yumyum  Delicioso!
