Peach Salsa

Got up earrrlllllly to make my Peach Salsa.  It’s a fairly easy recipe, however this is lots of chopping, so chop chop to it!


–  1  &  1/2 yellow onions, chopped

–  3 Cloves Garlic, Minced

–  6 Medium Red Tomatoes, seeded, dried and chopped

–  3 or 4 Peaches, peeled and chopped

–  1 Yellow Pepper, chopped and seeded

–  1 Small Green pepper, Chopped and seeded

–  2 small Jalapeno Peppers, chopped and seeded

–  3 Limes, squeeze and use juice only

–  1  &  1/2  Tblsp. Tomato Paste

–  3 Tblspn. Sugar

–  3 to 4 Tblspn. Honey

Method:   Put chopped onions in a fine sieve and rinse in cold water.  Shake off any water.  Add to a large bowl.  Add minced garlic.  Wash tomatoes, cut, remove seeds and lay on paper towel to dry them out  (I find drying the tomatoes and removing the seeds makes for a less watery salsa).  Chop them up and add to the bowl.  Peel peaches and chop up, add to the bowl.  Add chopped yellow pepper, chopped green pepper and the chopped jalapeno peppers.  Mix very well to combine all ingredients.  Next add:  lime juice, tomato paste, sugar and honey.  Mix well.    The following step is to pulse the salsa.  Add a bit at a time to a blender and “PULSE” it slowly, do not blend.  You still want a chunky salsa, not pureed, you want to have the bits and pieces of all the vegetables and fruit.  I usually jar this salsa so I can give to friends.  This recipe makes about 7 pint sized jars.  Serve with tortillas or pita chips.  Is really great on top of broiled fish or chicken.  YumYum!
