Where have all the tigers gone…?

It’s so sad another one of our beautiful predators are being hunted to extinction.  Can we possibly save these creatures??  I think that if those of us that cared enough, rallied enough, we could help.  I often wonder how these animals feel and I have been laughed at while being told “Animals do not feel!”  I don’t believe that is so.  Just seeing my poochie’s face when she has done something bad  tells me she has feelings, when I walk in the door and am greeted with wagging tail and delightful smooches, I know she feels.  Humanity needs to come together to save what has been given to this earth freely.  I wonder… maybe there will come a time when humans may cease to exist, could there possibly come a day when humans are close to extinction?

A CENTURY AGO THERE WERE 100,000 TIGERS IN THE WILD, TODAY THERE ARE AS FEW AS 3,200.

Wild tigers face enormous obstacles as their habitat is being destroyed at an unprecedented rate and the demand for their skins, bones, meat and parts for use in traditional Asian Medicine and as folk remedies is on the rise. Unless we do something drastic to protect wild tigers, they could be extinct from the wild in just 12 years.Save Tigers Now is a global campaign by Leonardo DiCaprio and World Wildlife Fund to help save these majestic creatures from extinction.

Our goal is to build political, financial and public support to double the number of wild tigers by 2022.

Feel Good Snack

This is my newest discovery.  Choosing healthy snacks has become a better option for me.  I discovered these on a shopping trip and they are very delicious and quite satisfying.  Just a handful and I am a happy camper.  When I am feeling like cheating I grab some and feel like I just indulged in a sinful dessert.  I am sure many of you may have already “Discovered” this amazing treat.    “ORGANIC TRADITIONS – DARK CHOCOLATE ALMONDS”.

Ahhhh weddings,  my lovely niece is to marry this June and I have been busily crafting her table number cards.  This is what has been keeping me buzzzzzy today.  Running in and out getting this and that, and back out again because I am so organized, Not…  well not lately anyways.   As soon as I am done I will post a pic of how they turned out.  I must say I am pretty impressed with myself, considering I have 15 to do….  and I am only on number 4  Ooops!  GET BACK TO WORK!!  LOL

What??!!

OMG!  I am up to date with watching the televised series of “GAME OF THRONES”  

!!??WHAT??!!  I can’t believe Eddard Stark was executed (Beheaded)!  I was shocked, such a strong character … GONE!!!   I kept hoping there would be some fantasy plan that he would pop back up onto the show, awaken in the forest, be brought down from the skies….  nothing, poo!!  I am saddened.  I continue to watch.  Maybe a witch will bring him back.  Sniff Sniff.  I do have to say this show does have surprises that you are not expecting.

Chicken Broccoli Alfredo Pasta

It’s been a busy start of the week, and dinners have had to be quick, easy and did I mention quick?  Had some leftover chicken in the refrigerator and was wondering what I could do with it.  This is a recipe that has a whole lot of flavor BUT is not so big on the Fat.  The traditional recipe for Alfredo sauce calls for cream and butter, not this one.  Try it, and I am sure you will agree it is just as satisfying without all the calories.

CHICKEN BROCCOLI ALFREDO PASTA

–  About 2 Cups Cooked Chicken, cut up

–  5 strips cooked bacon, broken up (turkey bacon works well, press into a paper towel after cooking to remove any fat)

–  About 1 Cup Steamed Broccoli

–  Prepared Pasta  (Whichever kind you like, bowties, rotini, penne etc…)

–  1 & 1/4 Cups Chicken Broth (I use the less sodium one)

–  4 tsp. Flour

Method:  In a large saucepan pour in the Chicken Broth.  Whisk in the 4 tsp. Flour.  Next add,

–  1/3 Cup Low-Fat Cream Cheese

–  2 Tblsp.  Parmesan Cheese

–  1/4 tsp. Ground Nutmeg

–  1/8 tsp. Black Pepper

–  1 Tblsp.  Parsley (optional)

–  Combine all these ingredients into the broth mixture and cook for approx. 2 minutes until it begins to boil and has thickened.  Add the cut up chicken and bacon and stir.  Next, toss in your prepared pasta and broccoli and toss it all up and serve.  Bon Appetit!

 

Ground Chicken Tofu Chili

My latest recipe addition, an alternative to the normal “ground Beef Chili”  this is a little more healthier and has a whole lot of taste.  Adding tofu makes it an even healthier choice.

Ground Chicken Tofu Chili

–  1 lb Ground Chicken

–  1 pkg Tofu (plain or herbed, I used herbed)

–  1 large Onion, Chopped

–  2 large Cloves Garlic, Minced

Method:  I a large skillet, cook ground chicken adding the onion and garlic.  If there is any fat in the pan, discard carefully.  Now add the following:

–  2 Tblsp.  Chili Powder

–  1 tsp. Ground Cumin

–  1/2 tsp. dried Oregano Leaves

–  1/2 tsp. Pepper

–   1/2 tsp. Hot Pepper Flakes

Add the spices/herbs to the chicken mix and stir well.  Let cook on low for about 3 minutes.  Add this mixture to a slow cooker pot and turn on to low.  Add the following ingredients:

–  Crumble in the rinsed tofu (I rinse the tofu before using and slice it up, makes it easier to crumble)

–  1 can (28oz) diced tomatoes

–  1  can Tomato Paste

–  1 container Mushrooms,washed and sliced

–  1  1/2 of Green Peppers, chopped

–  2 cans (19oz or 540ml) Red Kidney Beans, rinsed well in cold water  (I use the kidney/chick pea/nava bean mix)

–  1  1/2 Cups corn kernels (fresh, canned or frozen)

Include all these ingredients to the crock pot (slow cooker) and stir well to mix.  Cover and cook on low for 4-6 hours.  Stirring every once in a while.  I serve my chili with rice and crusty bread.  I also add a dolop of sour cream or cheese to top it off.  As usual, you can do whatever you please, a simple yet delicious fulfilling meal.  Salute!

Game of Thrones

 

Another Televised series I have begun to watch (I know I know I watch a lot of tv right?  well I am also an iron nut, so what else am I supposed to do while I iron away).  Wow, I do love these medieval based series, I watched the entire Tudors series, Camelot (although I was extremely disappointed there would not be a second season, oh poo I really did enjoy Morgan and all her nastiness). And I just love all these original costumes, I get tons of ideas for my own costume making.

So now it’s “Game of Thrones”, a medieval fantasy television series that is quite graphic and the young should not, in my opinion watch it.  I am not far in the series but I do find it very interesting and there is a second season happening as of now.  To just imagine what these soldiers had to endure and live with.  Not like today when a bullet hits you and you had no idea it was coming.  It must have been a very scary and brave thing at the same time.  I am enjoying the character Eddard Stark  (Sean Bean),   “Kahleesi” Daenery’s Targaryen  (emilia Clarke)  and  Catelyn Stark  (Michelle Fairley),  I like many of the characters but these three seem to be very strong and influencial.   And of course we have the Queen B Cersei Baratheone Lannister  (Lena Headey),  what would a good medieval tale be without one of these?!  I also have to mention the “Imp”  Tyrionne Lannister  (Peter Dinklage),  he has me going everytime, he is a hoot and a laugh to boot.  And what can I say about “prince Joffery”  (Jack Gleeson)…  I think those of us who watch the show, know what to think and say about him LOL (he does play his part well).   This young fireball girl has the energy of no other…  “Arya Stark”  (Maisie Williams),  I am sure she will hit the battlefields any day now.  I invite you to watch, I think it’s a great series and has all the entertainment attributes you may be looking for (other than the gore) I think it’s great!  (so far…)
