“FAK !!” Strawberry-Banana Morgan

Friday Afternoon Kocktail time!  Made up a slushy Strawberry-Banana Morgan cocktail, was really really good!  

Strawberry-Banana Morgan

–  3 oz Captain Morgan’s Spiced Rum

–  3 oz Banana Liqueuer

–  a whole container of Fresh Strawberries (reserve a few whole ones with their green tops for deco), washed and cut up (put them in the freezer for an hour or two)

–  Lots of Ice (2-3 cups)

In a blender, add the very cold strawberries and blend until pureed (if you want, I pressed them through a sieve, cuz I don’t appreciate the seeds stuck in my teeth!).  Return the strawberries to the blender if you pressed them and throw in the Spiced Rum, Banana Liqueur and the ice (I like lots of ice, I used more than a cup, probably 2.5 cups).  Blend and blend away.  Once it is thoroughly blended pour into some pretty glasses and decorate with your whole strawberries….P-R-E-T-T-Y!!  and yummers to boot!

“FAK!” Pina Coladas

“FAK !”   I hope to have a recipe every Friday for our “Friday Afternoon Kocktails”.  It is nice to just sit and relax and have a cocktail (you can make it virgin, they still taste amazing even if you don’t add the alcohol) and cocktails look soooo pretty too!  Weather has been rather hot here to say the least,  the humidity just makes it more unbearable.  At least I have some comfort in the enjoyment of my pool and a nice cold  refreshment makes it so much more enjoyable.  My recipe for my cold frothy Pina Coladas.  You can hold the alcohol or not, your choice.  I opted for the booze (Oooops!).

PINA COLADA

–  2  Cups Fresh Pineapple (Blended and pureed and put into ice cube trays, Freeze.  Do this a day ahead)

–  3 oz Rum  (I used 1 oz Bacardi White Rum and 2 oz Captain Morgan’s Spiced Rum)

–  1/2 Cup Coconut Cream

–  1 Cup Pineapple Juice

–  1 Cup Crushed Ice

–  Fresh Slices of Pineapple and Maraschino Cherries (on the stem if you can find them) for Decoration and eating enjoyment  🙂

Put all the ingredients into a blender and Blend, Blend, Blend…  Serve immediately in a tall glass and decorate with Pineapple slice (I forgot to keep myself a few slices of fresh pineapple, o0yyy!  But I did add the cherries heehee).  A cute little paper parasol was missing, oh well next time.

I can smell summer

Back at the cottage!  The snow is still lingering, but much of it has melted.  The lake still grips its icy form but I am sure in a few more weeks it will all be gone and more fun boating adventures will begin.  It was a perfect day, a little cool but biking is so much more enjoyable on cooler days than those hot steamy ones.  I love being up north, it’s sooo quiet and peaceful…stress? Doesn’t exist here.  I could not have asked for a better day!  After a few hours of exploring and biking all the hills I was ready to relax on the deck, take some sun and enjoy the amazing views.

The Catcher in the Rye

My year is off to a good start.  One of the things I want to do is read books that I always wanted to read but never did…why?  Pure laziness, Ooops!  So I recently acquired “The Catcher In The Rye”. I am on page 60, started reading about 5 days ago.  I try to read at least 10 pages or so every night (hey whadda want?  I am up at 5:30 in the am yeeesh!) and I am enjoying the book,  this Holden character makes me laugh… he is hysterical, I think he has OCD or something, at times I get dizzy just reading the words.  If anyone has read the book (and I am sure there are zillions of you that did), you get what I mean.   I am only 60 pages in but I feel sorry for this guy, how depressed he gets…  Anyhoo, I think this book is going to be way more enjoyable than that snorefest 50 shades of whatever!  I will let you know what I thought of the book and why it is such a classic when I am done.  It will be my book review of sorts.  Maybe some of you out there can shout out some really great books that are worth reading, that would really be helpful, then I don’t have to search high and low here and there and everywhere.

Abercrombie A Constant Shopping Horror

3594-Gilly-Hicks-saleANF_LOGOShollister-logoA letter I sent to Gilly Hicks today in my absolute disappointment with their horrible service.  I know mistakes happen but this is a constant thing lately with Abercrombie’s empire, it is just ridiculous.

Gilly Hicks,

I am totally disgusted with your service this year! I placed an order with Gilly Hicks well before Christmas and was told I would receive the parcel on or before December 22nd, 2013 with my SHIPMENT CONFIRMATION. Gilly Hicks received my order December13, 2013 and took their sweet time sending my order out only on December 17, 2013, but it was NEVER shipped to begin with! Upon calling Purolator the woman informed me that a waybill was created and that they have been sitting there waiting for Gilly Hicks to send them the parcel for shipping? Really?? I called Gilly Hicks and you NEVER even sent the order out. Why did I receive a shipment confirmation?? Your operator and Gilly Hicks seemed like it was no big deal? I guess Gilly Hicks has been making so much money (Abercrombie & Fitch / Hollister Co.) this year that my order ($122.66) was just meaningless. The operator offered to resend my parcel but of course half of my items were no longer available. Not to mention two girls have been disappointed.

Last year it was just confusion as well with the wrong items sent etc…

This is my tip telling me that I should no longer order from Abercrombie/Hollister or Gilly Hicks which had become a family tradition…Too Bad

50 Shades of Zzzzz

So I finally got around to start reading the “50 Shades of Grey” books.  I purchased the 3 book set in the spring of 2013.  Okay, okay so I haven’t had time geez!  I did actually get through (and I mean it took me a while), the first book.  I started reading this past June and I just don’t get it?  I have been hearing that you will either love it or you will hate it.  I won’t say that I hate the book, I have to congratulate E.L. James for actually writing and getting her first book published, but I am not sure what all the hype was about.  I definitely found the writing to be amateurish (?) and E.L. James is how old?  Sorry, but there were many sayings in the book that people just DO NOT say, especially 20-30 year old’s who are having crazy sex.  Really?  I just could not get into the story.   It took me 3 months to read the first book, Yeeks!!  and I am reading the second book now,  3 months later and I have barely gotten anywhere.  I find the reading very boring.  I highly doubt I will finish it or the third book.  Ebay here I come….Oooops.   When I am engrossed in a good novel or story it takes me a few weeks to read (I was done with East of Eden in about 5 days,  I am certainly not comparing her to John Steinbeck).  Well what can I say, it’s just my opinion, but I definitely am in the list of the “Hate it” or let’s be nice and say,  “Did Not Like It” category.  If you are having a bad night and your sleep is restless, maybe you are having a little insomnia, I suggest you pick up a 50 Shades of Grey book, it should do the trick and put you right to sleep…

Delicious Eggplant Roll Ups

Wow!  It has been quite a while since I have been here  (Oooops!)   I  am so busy with a small reno project at the house and everything else,  it has just been crazy to find time.  I am however posting a great recipe for these “Eggplant Roll Ups”.   A friend would always bring me these delicious eggplant rolls every Friday for our little 5:00  à  7:00  by the pool and they were amazing, and good for you!  A great vegetarian alternative.   So I wanted to try and make them myself and they turned out great.  They are pretty easy to prepare,  just a little chopping,  but if you have a processor it is real fast to make.   They are also filling enough to be a meal if you have two.

This recipe was adapted from the Dr. Oz show.  I just tweaked it a little to make them how I would like them.  I am always tweaking things  🙂

EGGPLANT ROLL UPS

2 large eggplants, peeled and sliced lengthwise 1/2 inch thick
2-3 tbsp water   (I used 1 Tblsp.  Extra Virgin Olive Oil)
2 medium red bell peppers, seeded and coarsely chopped   (I used 1 med. red pepper and 1 med. green pepper)
1 medium onion, coarsely chopped
1 cup chopped carrots  (I chopped them very fine)
1/2 cup chopped celery  (I chopped them very fine)
4 cloves garlic, chopped
8 oz baby spinach  (I used about  2  1/2 cups baby spinach or 16.5 oz)
1 tbsp no-salt seasoning, adjusted to taste  (I used 1/4  tsp.  ground 3 peppers  red/black/white mix  and 1/2 tsp. each Basil – Oregano – Parsley – 1/4 tsp. Hot peppers)
2 cups no salt added or low-sodium pasta sauce, divided   (I used  1 –  240 ml can diced tomatoes in roasted garlic, juice drained  and 1 – 200 ml can tomato paste and combined them together)
6 oz non-dairy mozzarella-type cheese, divided  (I used 1/2 a bag of the Kraft already shredded Italiano 3 cheese mix)

METHOD:

Preheat oven to 350°F. Lightly oil a non-stick baking pan. Arrange eggplant in a single layer in the pan. Bake about 20 minutes or until eggplant is flexible enough to roll up easily (check them to make sure they do not get overcooked, you want to be able to just roll them, they should still be firm).  Set aside.

Heat 2 tablespoons water  (or olive oil)  in a large pan, add the bell pepper(  both peppers if you make my version), onion, celery, and garlic; sauté until just tender, adding more water if needed  (I also added some water at this point not any more oil). Add the spinach and seasoning  (or seasonings) and cook until spinach is wilted  (I did not let it wilt too much I left them still pretty stiff, if that is the right word, they cook in the oven so you still want them to be that pretty bright green).

Transfer to a mixing bowl. Mix in 2 to 3 tablespoons of the pasta sauce and all of the shredded cheese (I reserved a bit to include in the middle of each roll up).  Spread about 1/4 cup of the pasta sauce in a baking pan. Put some of the vegetable mixture on each eggplant slice  (I also added some of the reserved cheese here, but just a bit), roll up and place in a pan. Pour the remaining sauce over the eggplant rolls. Bake for 20-30 minutes, until heated through.  *Do not overcook, or they will become soggy.  Serves 6

I have to say this is a very tasty recipe   yummy!   🙂
